Coconut Rice

  • 2 cups of coconut milk
  • 1 1/2 cups Sunrice Basmati Rice, soaked 
  • 3 tablespoons of ghee
  • 5 cloves
  • 5 black peppercorns
  • 1 medium onion, sliced
  • 2 tablespoons sugar
  • Salt -to taste 


Heat ghee in a deep pan. Add cloves, black peppercorns and onion. Sauté till onion starts turning brown.

Add sugar and sauté till it caramelizes.

Add drained rice and stir gently so that the rice grains do not break.

Add coconut milk and one cup of water and stir.

When the mixture comes to a boil, add salt and boil for five minutes.

Cover and cook on medium heat till done.

Remove from heat and allow to rest for five minutes.

Serve hot.
